
Mushroom soup
Soup is always considered a great comfort food. Try this very simple mushroom soup recipe. It’s great to enjoy this during cold weather or served for a sick loved one. It easy to prepare and takes very little time.
Ingredients
- 1 ounce butter
- 1 medium leek, trimmed, halved & thinly sliced
- 1 garlic clove, crushed
- 5 ounces flat mushrooms, diced
- 5 ounces cup mushrooms, diced
- 1 /6 cup plain flour
- 2 cups chicken stock
- 1 /3 cup cream
- 1 /6 cup chopped flat-leaf parsley
- Salt & ground black pepper, to taste
Directions
Take a large sauce pan and place it over medium high heat. Once the pan has been properly heated, add butter and melt.
Add leeks and garlic. Cook for about 2 to 3 minutes until the leeks and garlic become soft.
Add the mushrooms into the pan, stirring occasionally. Stir the mushrooms for about ten minutes until the mushrooms become tender or soft.
Add flour to the tenderized mushrooms and stir constantly for two minutes.
Gradually add chicken stock to the saucepan containing the mushrooms and leeks. Bring everything to a boil, stirring constantly. Once the boiling point is achieved, reduce the heat to low and cook for 10 minutes. Remove the saucepan from the heat.
Pour everything in the food processor and process to attain the desired consistency. Add in the cream to the processed mix. Add parsley to the processed mix. Again pour the soup back into the sauce pan and heat over medium low flame without boiling it until it becomes hot. Season your soup with salt and pepper.
Tips
You can have this mushroom soup with friends and family as starter either with toasted bread, even baked or garlic bread. This also goes well with fish crackers or rice crackers. Picture by kimberlykv.
